Food and Wine
Gallura is a land of tradition, and the unique flavors and aromas of its remarkably authentic cuisine nourish both body and soul. During your stay at Pausania Inn, be prepared to take a journey into Sardinia’s culinary past and present, and to experience the simple, yet varied and refined cuisine of this wonderful Italian region.
Cast aside memories of chain restaurants and fast-food meals gobbled down on a lunch break from the office… Relax, enjoy the wonderful delicacies on offer here, and let our waiters pamper you.
Before you leave, you’ll have had a chance to taste and smell our delicious myrtle liqueur and the strong distilled spirit called Filuferru, our wonderful local honey poured over warm homemade seadas (cheese-filled sweets), and our delicate Sardinian extra virgin olive oil drizzled over the paper-thin flatbread that is one of the hallmarks of the region’s cuisine, pane carasau. Sit down, order a bottle of local wine, and let the journey begin!
Art in the Hotel
While the roots of local arts and crafts are ancient, many of the traditional techniques are still in use today. When wandering around the town’s backstreets you may well stumble upon small workshops, and, if you peek in, you might just see the artisans at work using tools from the past: hand looms and chisels, potter’s wheels and knives.
The handiwork of weavers in Aggius never fails to fascinate visitors, and equally remarkable is the craft of local silversmiths and goldsmiths.
Pausania Inn’s Boutique, spread throughout the common areas of the hotel, is dedicated to local arts and crafts, and showcases a selection of gift items that draw from the rich heritage of Gallura, including fine ceramics, wood and stone sculptures, hand-woven textiles, and traditional Sardinian jewelry.
Our aim is to bring together the worlds of tourism and art. We hope our displays will help promote an appreciation of the Sardinian heritage, while creating an environment for you to enjoy as you relax on your holiday. If you so wish, you may purchase the arts and crafts on display directly from the artisans who made them: our staff will be happy to assist you and to give you any information you may need.
Pausania Inn’s restaurant serves Italian and typical Sardinian cuisine. Among other dishes, our experienced chef prepares excellent gnocchetti sardi (small, durum wheat gnocchi, usually served with a tomato-based sauce), porcetto al mirto (pork seasoned with myrtle), zuppa alla Gallurese (layered bread and cheese, baked in a meat broth), seadas (cheese-filled sweets, often topped with honey) and lots more. Our specialties are simple and hearty, and make ample use of local ingredients. Also, on request we are happy to serve vegetarian and gluten-free food.
Breakfast is our forte. Served as a buffet in a panoramic dining room, it comprises an assortment of homemade cakes and tortes, jams, cured meats, cereal and croissants. Indeed, you’ll find a wonderful array of sweet and savory foods that will help you fuel up for the day.
Our chef indulges his love of local traditions, and creates home-style dishes that will take you on a journey into Sardinia’s culinary past and present, and give you something to remember fondly and to discuss with your friends after you get back home.
Local delicacies are highlighted in our daily menus, and our wine list showcases excellent wines from nearby vineyards. You will also find a selection of traditional dishes on the special menu dubbed “our Chef recommends”.
Please let us know if you have any food intolerances or allergies: we will gladly suggest alternatives or come up with substitutions in our preparations so that you may enjoy our varied cuisine.
Original recipes and love of good food are our only secret ingredients. We look forward to welcoming you to our restaurant here at Pausania Inn!

- Visit Tempio Pausania, long considered Gallura’s cultural capital. Its historical center, made up of a seemingly endless succession of granite buildings adorned by wrought iron balconies overlooking stone-paved alleys and streets, offers many beautiful views: the Cathedral of Saint Peter, the Oratory of the Rosary and the Church of the Holy Cross; the house of Nino Visconti, the last ruler of the Giudicato di Gallura, cited by Dante in the eighth Canto of the Purgatory; via Mannu, described in the past as “a noblemen’s street,” because it was home to the Spanish aristocracy; the Theater of the Carmine (1929) and the adjacent cloister (1650). In via Roma, a few steps from the cathedral, marvel at the creations of tailor and designer Anna Grindi, who in 1999 patented a fabric made of cork, Suberis. Visit the old train station dating back to the 1930s, and check out Giuseppe Biasi’s charming murals in the waiting room; the train station’s workshop, from the late 1800s, is closed to the public, but it’s worth asking the staff if they’ll let you take a peek inside. Stroll along the Fonte Nuova, Tempio’s summer boulevard, and walk up the steepish pine grove of Saint Lawrence to the springs of Rinaggiu.
- Visit the archaeological site of Nuraghe Majori, 500 m from the hotel.
- Hike or walk on Mount Limbara.
- Go to the nearby Moon Valley, whose wind-molded granite sculptures are a breathtaking sight.

- Ride in a boat on the Coghinas River, where bird-watching opportunities abound.
- Visit the Archipelago of La Maddalena, stopping on the islands of Spargi, Budelli, Santa Maria and Caprera (you can also book a seafood lunch on board the boat).
- Take part in a wine tasting at the Piero Mancini Vineyards (Olbia), 40 minutes by car from the hotel.
- Board the Little Green Train, which sets off on a breathtaking journey through the region’s untamed interior and reaches some of its most beautiful northern destinations.
- Spend the day at the Aquafantasy water park (Isola Rossa), 30 minutes by car from the hotel.
- Spend a few hours at the spa in Casteldoria (S. Maria Coghinas), 40 minutes by car from the hotel.
- Head out to the Island of Tavolara, from Porto San Paolo, about an hour by car from the hotel.
Tempio and environs
At the foot of Mount Limbara, the lovely and distinctive town of Tempio Pausania has long been considered Gallura’s cultural capital. Its historical center, made up of a seemingly endless succession of granite buildings adorned by wrought iron balconies overlooking stone-paved alleys and streets, offers many beautiful views.
Tempio is a lively and welcoming town, noted for its winter Carnival, one of Sardinia’s biggest and most popular: the dancing, street parades and general merriment last for six days, and thousands of people participate. The International Folklore Festival takes place each July, and has been a yearly tradition for over 30 years. On August 14th and 15th, the Mountain Feast draws local crowds to Mount Limbara. The Feast of Saint Isidore, protector of farmers, is celebrated on the first Sunday of September: on this occasion, an image of the saint is carried in procession through the streets of downtown on ox-drawn wagons, with the accompaniment of the town band, of horsemen and folk groups from all over Sardinia, and of musicians playing primitive reed-pipe instruments called launeddas. The Feast of Mary the Child, on the first Sunday of September, comprises a very evocative torchlight procession throughout town and should not be missed.
Pausania Inn is ideally located both to visit nearby Mount Limbara and to access the coast and beautiful white-sand beaches of Northern Sardinia, with a pleasant drive through the so-called Moon Valley, a spectacular landscape studded with wind-molded granite sculptures. The hotel is also perfectly located to enjoy Paolo Fresu’s Time in Jazz International Festival as it comes to town in August.
The surrounding area is rich of natural and archaeological attractions, including thousand-year-old olive trees, Mount Limbara, the springs of Rinaggiu and the archaeological site of Nuraghe Majori, 500 m from the hotel’s front door.
Pausania Inn is an excellent base for all sorts of outings. During your stay, you can hike, bike, horseback ride, take an off-road vehicle or board the Little Green Train, which sets off on a breathtaking journey through the region’s untamed interior and reaches some of its most beautiful northern destinations.
